The commercial pistachio cultivars of Iran include the following five:
- Akbari pistachio (with commercial name Super Long Pistachio)
- Ahmad Aghaei pistachio (with commercial name Long Pistachio)
- Fandoghi pistachio (with commercial name Round Pistachio)
- Kalleh Ghuchi Pistachio (with commercial name Jumbo Pistachio)
- Badami pistachio (This pistachio also is in row long pistachios)
Each pistachio cultivars are classified in three groups:
- Naturally opened pistachios
- Mechanically opened pistachios
- Closed Shell pistachios
Mechanically Opened Pistachios
As you know, the percentage of closed shell pistachios are used for to provide mechanically opened pistachios. The kernel meat percentage of mechanically opened pistachio is between 47% and 50%. Of course, things like the %semi-open as well as the percentage of empty in the product is also important. Of coarse, the percentage of moisture in the product is important.
